Lake District, Van, Pancakes

We are camping-addicts, and Camilla has been camping her whole life, summer and winter, mountain, cities and seaside, but the weekend camping in the Lake District has been a memorable experience:

It was not “Glamping”, there was no Yurta or bonfire, but it was so unique as we were sleeping, eating, cooking, and hanging out in this beautiful old timer, a Mercedes 508, which is currently home of our talented Belgian friends Gijs and Marijke.

Gijs is an artist (here his instagram and facebook page), surfer and free spirit, and Marijke a photographer, videomaker, cook and multitalented happy soul. They decided to start this trip to re-discover the world at a slower pace, living life in a simpler way and more connected to nature. When their trip brought them to the UK it was the perfect opportunity for Cami and Peter to meet up and spend couple of days discovering this magnificent park, hiking and sleeping in the middle of nowhere!

The van is just charming. Their remodelling made it cozy, functional, welcoming and incredibly beautiful. These pictures taken by Marijke speak from themselves.

Cami couldn’t miss the opportunity of cooking in such a cool setting (and in an amazingly functional kitchen), so decided to treat her guests with some breakfast pancakes. They are really easy to whip up, and you can prepare them also on a normal camping fire. You just need a small pan and couple of small bowls (one pot to mix the batter is fine too!). They are bite sized, so you can eat them with your hands and there is no need of using extra plates and pots. Open up a jar of jam, marmalade or honey. Drop a spoon on top, and some fresh fruit, and enjoy while sipping your morning coffee.
Who said that camping means eating bad? Cooking in the middle of the nature is part of the fun, and a warm meal prepared with love will bring the whole experience to another level!

Serves 4 -medium/easy– Prep time: 20 minutes

GLUTEN AND DAIRY FREE

You will need

  • 2 eggs
  • 1 1/2 cups of coconut milk (something like this will do!)
  • 2 cups buckwheat flour
  • 1 tbsp sugar
  • jam/honey
  • fresh fruit
  • Oil to grease pan

How to:

  1. Separate the egg yolks and whites
  2. Beat the egg whites with a whisk until white and fluffy. You don’t need to make them ready for a meringue, but the stiffer the better (it’s a good workout without electricity!);
  3. In a separate bowl, beat the egg yolks and the sugar until fluffy;
  4. Add the coconut milk and the flour and mix until you obtain a smooth batter, then incorporate the egg whites;
  5. Heat a pan on the fire with a little oil to grease, add the batter with a spoon so you’ll obtain small, rounded, bite sized pancakes;
  6. Let cook for around 30 seconds each side;
  7. Open a jar of jam/marmalade/honey, cut some fresh fruit;
  8. Serve warm, in a big platter, and let everyone add a teaspoon of it on the pancake and some fresh fruit.
